Roasted Sweet Potato & White Beans | Sheet Pan Prep

Roasted Sweet Potato & White Beans

This is my new Fall favorite to keep on-hand at all times— it works perfectly as a base in Meal Building. Nothing like some cozy potatoes & beans to warm up a brisk evening.

This combination of rustic Sweet Potatoes and hearty White Beans make an excellent addition to Rice Bowls and beautifully bulk up a salad (like this one!). If you’ve got some saved away for quick meals, just heat em up in the microwave for a few minutes and toss em in whatever you’re making!

This recipe also makes a great stand-alone side dish and is easy to double up if you wanna impressing some pals at a potluck. Drizzle with Sweet & Smokey Tahini Dressing and bask in the glory.


{ Difficulty: Level 2 } [ Makes ~ 5 cups ]

Ingredients

2-3 x Sweet Potatoes

1/2 tsp Garlic or Onion Powder

1 tsp Smoked Paprika

Salt & Pepper to taste

2 cans White Beans*

Instructions

  1. Turn oven on to 425 degrees.

  2. Dice your Sweet Potato into small pieces (dime sized)

  3. Coat all Potato pieces in Garlic or Onion Powder, Paprika, Salt, & Pepper

  4. Spread evenly on a baking tray & roast for 20-25 minutes, stirring once halfway through

  5. Meanwhile…..drain & rinse White Beans

  6. When Potatoes are done & cooled slightly, gently combine with White Beans in mixing bowl

Use right away or store for ~5 days

Notes

  • For the White Beans, you can use either Cannellini or Navy Beans.

Variations

  • Instead of using Sweet Potato, try your favorite Winter Squash!
