Harvest Kale Salad

This salad basically embodies everything I love about Fall, sans the spooky spider webs. Who ever thought snuggling up to a salad bowl would be so comforting? Crisp curly Kale and Apples contrast cozy warm Roasted Sweet Potato & White Beans, everything tied together with a Sweet and Smokey Tahini Dressing.

Got some leftover toasted pumpkin seeds from the jack-o-lanterns you’ve been carving? Sprinkle those over top for an ultra-festive feel. Eat kale, and stay spooky.


{ Difficulty: Level 3 } [ Makes ~ 1 big ass salad]

Ingredients

2 cups Roasted Sweet Potato & White Beans

1 batch Sweet & Smokey Tahini Dressing

1 bunch Curly Kale

3 x Apples

1 x Shallot (or 1/2 x Red Onion)

Instructions

  1. Make your Roasted Sweet Potato & White Beans: find recipe here

  2. Make your Sweet & Smokey Tahini Dressing: find recipe here

  3. Wash Kale, pat dry, and pull leaves off the stems. Tear or chop leaves into bite-sized pieces & massage them for 1-min with 1/4 cup Tahini Dressing in salad bowl.

  4. Dice your Apple into small chunks (penny sized) and thinly slice Shallot or Red Onion. Fold into salad.

  5. Warm Sweet Potato & Beans in microwave for 1-min, if not fresh out of the oven. Sprinkle mixture evenly over top salad.

  6. Drizzle some more Tahini Dressing over top, to taste.

  7. Grab some bowls and forks, serve up, and enjoy!

Notes

  • I typically have my Roasted Sweet Potato & White Beans and Sweet & Smokey Tahini Dressing already prepped in my fridge so it’s easy for grab and go meals.

  • Since Kale has tough leaves, this holds up well in the fridge in an airtight container for ~2-3 days. Or, take it on the go & it’ll be good un-refrigerated for 2-3 hours

Variations

  • Serve over a bed of warm Quinoa or Rice for a heartier meal
