Meatless Chicken Sandwich

Have I made this at least two times a week for the last several months? Yes. Have I gotten sick of it yet? Hell no. Should you make it? Yeah probably.

It’s simple and classic and delicious. What else can I say? I think my favorite part of this Sandwich— besides the fact that it comes together so dang quickly— is that it’s great any time of the day. I’ve had it for breakfast, for lunch, and at like 3am. It’s always good.


{Difficulty: Level 1} [Makes 1 sandwich]

Ingredients

1-2 x frozen Meatless Chicken Patty(s)*
(I like Boca brand)

2 pieces Sourdough Bread, sliced

Tomato

Red Onion

Lettuce leaves

Vegan Mayo
(I like Vegenaise brand)

Mustard

Salt & Pepper, to taste

Toaster

Sharp Knife

Instructions

  1. Cook your Meatless Chicken Patty(s) on the stovetop for about 6 minutes until crispy on both sides. Make sure you flip halfway through. You can season with whatever Spices and Spice Blends you have on-hand, if you’d like.

  2. While that cooks, pop your Sourdough Bread slices into a toaster and toast till your desired level of crunchiness.

  3. Cut a few slices of Tomato*, Red Onion, and tear up a couple of Lettuce leaves.

  4. Once your Bread is toasty, slather some Vegan Mayo and Mustard on each piece and sprinkle with some Salt and Pepper.

  5. Finally, assemble your sandwich by arranging everything on the two slices of Bread. Slice your sandwich in half and secure with toothpicks, if you wish. Grab your plate and enjoy with some of your favorite chips!

Notes

  • If you wanna throw some Avocado on this, too, I highly recommend it.

  • If you’re feeling low energy or don’t have access to a stovetop, you can totally cook the Boca Chicken Patties in a toaster or toaster oven. It’ll take a bit longer and won’t be as crispy, but I def do this myself and it’s worked great. Just don’t like, stick a fork in the toaster to get it out unless it’s unplugged, okay?

  • * Typically, Vegan Chicken Patties are made to fit a standard Hamburger Bun, so you may want to cook an extra if you want your sandwich to have some in every bite.

  • * I like to de-seed my Tomato whenever I’m using it in sandwiches to keep things from getting soggy and weird. To do this, I just slice off the ends of the Tomato and push out the seeds with my finger over the sink.
