Smokey Lemon and Shallot Bean Salad

Oh, Lemon Beans. Yall have been on repeat in my kitchen since like 2011 and you just don't get old.

This recipe is perfect when you’re swamped with work/school/life/whatever, and you don’t wanna spend all weekend in the kitchen cooking make-ahead meals.

I really love these Beans because they come together super fast, but don’t compromise on bright, refreshing flavor.

Eat them as-is, or use to bulk up a good Salad, top a Rice Bowl, wrap in a warm Tortilla with some Greens, or serve smashed on some toasty Bread. These Beans are excellent with other Lemony springtime favs— might I recommend a Garlicky Tahini Dressing?


[Makes: ~3 cups Bean mix]

Ingredients

1 can White Beans

1 can Kidney Beans

1 x Shallot *

1/4 cup Lemon juice

(~1 Lemon)

2 tbsp Safflower Oil

1 tsp Smoked Paprika

1 tsp Salt

1/2 tsp Black Pepper

splash of water, optional


Equipment

Strainer

Medium mixing bowl


Instructions

  1. Gather your ingredients.

  2. Drain and rinse both cans of Beans well in the strainer, and leave in the sink to drain excess water.

  3. While that drains, dice Shallot into tiny pieces and transfer to a mixing bowl.

  4. Add in the Lemon Juice, Oil, and Spices, then stir to incorporate. Add a splash of water if you'd like more of a "saucy" feel.

  5. Gently fold in the Beans to coat evenly.

  6. And that's it! Transfer to tupperware and chill in fridge for a few hours or eat immediately. Enjoy!!


Notes

  • * If you've never used Shallots before— I like to think of their flavor as a mix of Red Onion and Garlic. Super flavorful and a little spicy

  • These Beans are best if they marinate for at least an hour before eating

  • I find that glass containers keep recipes with Beans fresh for the longest— mason jars work great for this

  • Mix it up: add in some finely chopped fresh Parsley

Like, I'm a fan of meal prep for the most part. But "normal" meal prep methods have literally never worked for me. My ADHD brain just does not want to plan specific meals to eat every dang day. I can only do it my way, through this thing I call Meal Building.
