Cucumber Dill Sandwich

Nothin complicated here— just pure, flavorful herbiness in a Sandwich. When the sun starts hanging out in the sky again, I love munching on these in the warm afternoons. Plus, this Sandwich takes literally minutes to throw together, so it's one of my go-to easy meals. Make these whenever you want a great snack, side, or if you just wanna feel like a cool Cucumber.

Think of this recipe as a start for whatever creative direction you wanna go. Add in some extra Herbs or edible Flowers. Fold up Tofurky Slices in the middle. Toast your Bread beforehand. Enjoy your intuition.

[Makes: 1+ sandwich]

Ingredients

thin-skin Cucumber*

4-5 x Chives

White Bread
(or Sourdough)

Mayo
(I like Vegenaise)

Dried Dill

Salt, to taste

Black Pepper, to taste


Instructions

  1. Slice Cucumber into 8+ thin-ish rounds and dice Chives. Cut crust off of bread if feelin wild.

  2. Slather each slice of Bread with a hearty amount of Mayo and top with Chives. Spread to coat Chives in Mayo so they don't slide off.

  3. Add a generous sprinkle of Dill, Salt, and Pepper to the Mayo.

  4. Layer Cucumber ontop of the herby Mayo on both slices of bread.

  5. That's it! Smash both sides together or eat open-faced. Cut into your fav sandwich shape, and enjoy!!


Notes

  • * The thin skin of smooth Cucumbers tends to taste less bitter than the wrinkly ones. If that's your only option, you can peel the Cucumber or just deal with the minor flavor shift— it's really not the biggest deal

  • Mix it up: add Avocado, use fresh Dill, or add fresh Mint.

  • If you wanna keep it more "traditional tea sandwich", use a Herbed Cream Cheeze instead of Mayo

Personally, I'm getting way pumped about my backyard garden, my houseplants, and all things Lemony and bright. I also, like clockwork, am starting to clear out and reorganize alllll my stuff.

Like, none of these recurring hyperfocuses last very long, but I've kind of come to accept that my life will always ebb and flow with the seasons (and whatever else my ADHD wants to pay attention to).
