Dilly Chickpea Salad

I guess it's like a tuna salad?

I dunno, I've never had Tuna Salad.

But everyone on the internet uses Chickpeas when they want Tuna, so I tried it, and it's pretty dang good!! Think of this Dressing-doused Salad as a refreshing, crunchy, perfect-for-summer Sandwich stuffer.

This is the first of many recipes to showcase this amazing Sweet Dill Everything Sauce. The magic of this Dressing really shines through the lil smashed pieces of Chickpeas and Veggies. Scoop a hearty spoonful onto some toasty Bread with some Spinach and Mayo and you've got yourself a quick, refreshing lunch.


[Makes: ~3.5 cups Chickpea Salad]

Ingredients

1+ cup Sweet Dill Everything Sauce

2 cans Chickpeas (Garbanzo Beans)

1/2 tsp Salt

2 x sticks Celery

2 x Green Onions

1/2 cup Shredded Carrots


Equipment

Strainer

Microwave

Microwavable container

Medium mixing bowl

Potato masher or fork


Instructions

  1. Gather your ingredients!

  2. Make your Sweet Dill Everything Sauce and set aside.

  3. Drain and rinse your Chickpeas in a strainer, then warm them in a microwavable container for 1 minute to soften.

  4. In a mixing bowl, add 1 cup of Sauce, the warm Chickpeas, and Salt. Smash together with a potato masher or fork. Don't completely pulverize it, but make sure it's mostly smooth.

  5. Dice Celery and Green Onions into small pieces. Add to the mixing bowl as you go.

  6. Finally, add the Shredded Carrots to the mixing bowl and fold everything together. Taste and add more Sauce if you'd like.

  7. And that's it! Serve as-is, scoop into a Sandwich or Wrap, or tuck into the fridge for an afternoon snack. Enjoy!


Notes

  • Squeeze a Lemon slice over the top of everything if you wanna amplify the Tuna vibes.

  • I like to keep this dish easy as possible, so I use pre-shredded Carrots. But shred your own if you're feeling ambitious.

  • This is one of those recipes that's easy to double up or split in half.

  • You can refrigerate any leftovers in an airtight container for up to 5 days. After that, it starts to get a lil watery and weird.

By that, I mean recipes that have two recipes put into one. Personally, I don't mind them so long as they're linked and easy to follow. But on certain sites, it's reeeaaallly frustrating and I have *opinions* about it.
