Veggie Sausage and Tofu Breakfast Sandwich

There’s really nothin quite like the satisfaction of a big ol hearty Breakfast Sandwich. I’ve been making some variation of this for years now and still can’t get enough. This savory babe is made with my favorite hearty breakfast ingredients— Tofu, Veggie Sausage, Bagels, and Cheeze. It’s just a big ol’ mouthful of deliciousness.

The recipe below offers rough measurements and ingredients I usually have around the kitchen, but follow your heart and customize all you want. Avocado, Arugula, and Spinach would make great additions. You can also make this on your fav Bread, or English Muffins.

[Makes 1+ Sandwich]


Ingredients

Firm Tofu

Veggie Sausage
(I like Lightlife brand)

Butter, Margarine, or Oil
(I like Earth Balance brand)

sprinkle of Lemon Pepper
(or Black Pepper)

sprinkle of Garlic Powder

sprinkle of Turmeric Powder

Salt, to taste

Bagel

Tomato (or any other Veggies)

Cheeze Slices or Shreds
(I like Violife brand)

Mayo
(I like Vegenaise brand)


Equipment

Stovetop

Medium-size pan

Toaster or Oven


Instructions

  1. Slice off a Bagel-sized slab of Tofu and use paper towels to press out excess liquid. Set aside.

  2. If using pre-shaped Sausage, skip this step.
    If using Sausage that comes in a tube— squeeze out some Sausage ground and form it into a Bagel-size patty using wet hands.

  3. Wash/wipe off your hands, then put a scoop of Butter (or a drizzle of Oil) into a medium-size pan at melt over low heat. Once the pan is warm, place the Sausage patty and Tofu in the pan.

  4. Top the Tofu with a sprinkle of Lemon Pepper, Garlic Powder, Turmeric, and Salt, then flip & do the same on the other side. Let the Tofu and Sausage sizzle over medium-low heat— set a 4 min timer if you want.

  5. Pop the Bagel into the toaster or under an oven broiler set to low. Cut a few slices of Tomato and any other Veggies you’re using.

  6. Check on the Tofu and Sausage and flip when the bottoms are looking crispy and browned— set another 4 min timer. Once flipped, top the Tofu with Cheeze so it’ll start to get all melty.

  7. Take your Bagel and dress with a good slathering of Mayo. Add some more Lemon Pepper, if you’d like.

  8. Once the Tofu and Sausage are done cooking, layer them on your Bagel and top with your Veggies, if using. Get yourself a plate and enjoy!


Notes

  • This Sandwich can get a little messy, so make sure you’ve got a napkin handy or just, ya know, eat it over the sink.
