Hashbrown Burrito Wrap

I just started making these Hashbrown Burrito Wraps for make-ahead breakfasts and they're seriously a lifesaver.

My ADHD burnout has been a real issue lately, so I love grabbing this meal from the freezer, throwing it in the microwave, and getting on with my day. Also, I just love that this Wrap is sooo on-the-go friendly— a little self-contained pocket of goodness. If you need to eat this in the car or while checking emails, have at it.

This recipe is reduced to the bare bones— exactly what my decision-fatigued mind loves. But get creative if you're got the extra zest. Avocado, Pico de Gallo, or Soyrizo crumbles would make great additions.


[Makes: 1+ Burrito Wrap]

Ingredients

frozen Hashbrown Patty

~1/4 cup Refried Beans
(I like Amy's and Trader Joe's)

10" to 12" Flour Tortilla

dash of Garlic Powder

Salt, to taste

your fav Salsa

your fav Hot Sauce

Sour Cream
(I like Tofutti)


Equipment

Stovetop

Frying Pan, nonstick preferred


Instructions

  1. Pop your Hashbrown Patty into the toaster— you may have to toast it twice. The highest setting works for me, but every toaster is unique <3

  2. Warm a nonstick pan over medium-low heatScoop a hearty spoonful onto a Tortilla and flatten, leaving a few inches around the edges un-Beaned. Toss that Tortilla in the pan Bean-side-up and let warm for a few minutes.

  3. Once hot, remove Tortilla but keep the pan warm on the stove. Place the cooked Hashbrown on top of the Beans. Add Avocado or other extra ingredients, then sprinkle with some Garlic Powder and Salt.

  4. Work in a circular motion to fold Tortilla edges to the middle of the Hashbrown, overlapping slightly. Once it looks like a cute little pocket, throw it back on the pan, folded-side-down. Let it sear for a few minutes till golden brown and holds itself together.

  5. And we're done! Remove from the pan and let cool for a sec. Serve with Salsa, Hot Sauce, and Sour Cream and enjoy!!


Notes & tips

  • Mix it up: add in some Avocado. Top with your fav Hot Sauce (I *love* Marie Sharp’s). Douse in this Cashew Lime Crema

  • Fold into a Taco or roll into a Burrito if there isn't enough Tortilla-edge to make a wrap

  • Wait for these Hashbrowns to cool a lil before removing from your toaster or they'll fall apart and ruin your morning

  • My toaster holds 4 Hashbrowns perfectly, so I load 'er up and make four Wraps at a time. Store extras in the freezer n microwave for 2.5 min to reheat. Pop in the toaster after microwaving if you want em crispy again.
