Herb n Veggie Bagel Sandwich

~5 ingredients — difficulty: level 1

an everything bagel smothered with a generous amount of non-dairy, herbed, chive cream cheeze with slices of cucumber and baby salad greens tucked between the bagel halves. served in a bowl because the plates were dirty, of course

I don't always eat my Bagels out of bowls, but I couldn't be bothered to wash a plate so

the bagel sandwich of ur dreams

It's slowly turning to spring in the Northern Hemisphere and you know what that means? ~Salad Greens~

Whenever I'm feeling bold and buy one of those bags of Baby Lettuce, I'm always looking to find ways to use it in the approximately 0.5 seconds before it goes soggy.

Enter: Veggie Bagel Sandwich.

This handheld deliciousness a really great, quick, and simple meal for breakfast, lunch, dinner, snacks, whatever. I find it's simple enough to eat on consecutive days or for repeat meals, which is a huge plus for decision fatigued ADHD brains. Plus, the fresh Veggies really help me feel like we're creeping out of the winter lull and into sunnier days.

Give it a go! Sub a GF Bagel as needed.


[Makes: 1 Bagel Sandwich]

Ingredients

Everything Bagel (or something else Savory)

Cucumber

1 x Green Onion

Baby Salad Greens or Spinach

Herbed or Green Onion Cream Cheeze (I like Kite Hill)

Salt

Black Pepper


Equipment

Toaster

Sharp Knife


Instructions

  1. Gather your ingredients!

  2. Pop your Bagel into the Toaster.

  3. Cut your Cucumber into 3-4 thin slices and chop the Green Onion into thin pieces. Rinse off your Salad Greens, if needed. Sprinkle all your Veggies with a pinch of Salt.

  4. Spread some Cream Cheeze on your toasty Bagel halves and top with a bit of Black Pepper.

  5. Layer and smoosh your Veggies between the bagel halves.

  6. And that's it! Stick a toothpick in the middle (if you're so inclined) and enjoy!


Notes

  • If you Cream Cheeze is un-Herbed and you want to, uh, Herb it, add some Dill and Parsley. Tiny diced fresh leaves or dried are both great options.

  • This Sandwich is also excellent with fresh Sprouts instead of the Salad Greens. It's also great without the Greens.

  • I should mention— the pinch of Salt here is totally worth adding if you can. It really brings out the flavors of the Veggies and makes the whole thing feel fancier.

By "these sorts", I mean, relatively simple ideas that generally make food for just one meal?

I've been on the brink of burnout for a while now and find myself without the bandwidth to cook larger, multi-meal meals more than once or twice a week. So, these simpler and quick meals are the things I've been eating most often lately. You can find some of those burnout friendly meals here.
