Potato, Kale, and White Bean Soup

a nourishing, simple staple soup

My go-to soup when I want a big bowl of brothy goodness. Much of the flavor comes from Veggie Broth and the Veggies themselves, but the Lemon adds a lil brightness, and the Chili Flakes add a hint of spice.

This is one of those recipes that's great to cook for multiple meals/people. Any uneaten soup after 5 days can be thrown in the freezer for another time. Halve this recipe if you don’t have a large soup pot or lotsa fridge/freezer space.

For a level 2-difficulty soup:
Throw everything into a big pot and bring to a boil. Once boiling, reduce to simmer, and let cook ~25 min till Potatoes are tender.

The instructions below bring out the most flavor— but it's not a big deal if you just cook everything together.


[ MAKES: ~8-12 cups soup ]

Ingredients

1 x Yellow Onion

drizzle of Oil

4 stalks Celery

4 x Yellow Potatoes

2+ tsp minced Garlic

(or ~4-6 cloves)

5 cups Water

4 tsp Veggie Boullion

1/4+ tsp Chili Flakes

1/2 tsp Salt

1+ tsp Black Pepper

2 cans White Beans

1/2 bag chopped Kale

2 tbsp Lemon Juice


Equipment

Stovetop

Large soup pot with lid

Strainer


Instructions

  1. Gather your ingredients!

  2. Drizzle a large soup pot with some Oil and turn to medium-low heat.

  3. Dice Onion into small pieces and add to the pot. Keep the lid on so the moisture doesn't escape.

  4. Chop Celery and Potatoes into small, uniform-ish pieces. Stir into the pot as you go.

  5. Mince Garlic (if using fresh) add to the other Veggies, and cook for a few minutes with the lid off.

  6. Add the Water, Boullion, Chili Flakes, Salt, and Black Pepper. Turn to medium-high heat and bring to a boil, uncovered.

  7. Meanwhile, drain and rinse White Beans in a strainer. Juice your Lemon into a separate bowl.

  8. Once boiling, turn to medium-low heat and set a timer for 10 minutes. Simmer uncovered till Potatoes are fork-tender.

  9. Once your timer goes off, gently fold in the Beans, Kale, and Lemon Juice. Let simmer another 5 minutes. Add some more Water if you want a thinner broth.

  10. Turn off the heat. Taste and adjust any seasonings to your liking.

  11. And that's it! Grab your favorite bowl, scoop in some soup, and top with some more Black Pepper. Enjoy!!


Notes

  • When it comes to White Beans— I use Cannellini since they’re most accessible to me, but Great Northern work too.

  • Recently I used a mix of Vegetarian Chicken Boullion and Vegetable Boullion for this soup and it was awesome. If you happen to have both, give it a go.

  • Mix it up: Add in some Thyme or Dill for some herbal flavor. Reduce the Water for more of a Stew. Serve on top a bowl of Rice.

I feel like a staple soup recipe is something every ADHD person would benefit from. It''s something you can make in bulk, eat for multiple meals, and freeze when you're sick of the leftovers.

And I dig this recipe because it's practically ingrained in my brain— it's really easy and quick for me to throw together since I've made it a billion times.
